Grape: Sangiovese 100%
Rosato is a rosè wine produced in Umbria region, near by the village of Sant'Enea, 15 min drive south of Perugia.
This wine is the result of a careful work done by Carlo Tabarrini,
who from 2008 dedicate himself to improve his own land without any chemicals and with a minimum use of mechanical machinery.
Vintage 2018 was quite hot with a small amount of rain from June to September.
Thanks to a quite temperature excursion from day to night, this vintage as given to this wine a great balance between freshness and body.
Grapes are hand picked the fist week of September, then destemmed mantening a whole grain.
Fermentation started naturally in steel tank without any yeast added, the entire cicle was about 16 days (4 days with skin contact), without temperature control.
During the fermentation process, refullings are 3 times daily.
Then ages for 2 months in steel tank (50%) and 50% barrique bent by steam.
No filtration and no clarification.
Great ageing potentials (up to 5 years)
